Let me introduce you to your new addiction. It's called a whoopie pie, and it is a cross between a cake and a cookie. I had my first taste at a bakery in St. Jacobs last fall and fell in love....these were much tastier actually. This version by Martha Stewart which I found in Martha Stewart's Cookies book (but you can find it here) has a peanut butter cream. The recipe made enough for a crowd, so note to self...half the recipe next time. I may experiment with freezing some. It would be very bad for us to eat 2 cups of butter in 3 days...mmm...butter.
